CJ's Mom's Tomato Jam

CJ's Mom's Tomato Jam
Makes: about 6 half-pints
C . J. sent a recipe from her mother.

Ingredients:
3 one pound cans OR 3 pounds fresh tomatoes, peeled, chopped and drained well
4 cups sugar
½ teaspoon salt
3 lemons, sliced thin
1 teaspoon powdered ginger
Preparation:
Combine all ingredients in a saucepan and simmer 1 hour and 20 minutes or until thick use a dutch oven. Remove lemon and put in sterilized half-pint or pint jars, filling them to within ¼ inch of top. Wipe rims clean, adjust lids and seal. Process in hot water bath canner 10 minutes. 
Note: This type of jam is usually thin.
